I hate to start this post by talking about the weather… but holy cow, this winter is crazy! From a massive snow storm a few weeks ago to torrential downpours today, I’m so ready for spring. There’s only one good thing about this time of year, and it’s two words: pineapple season. That’s right, you heard me. From Pineapple Fried Rice to Pineapple Coleslaw, Grilled Peach and Pineapple Salsa to Bacon Wrapped Stuffed Pineapple Jalapeños… well, I think you get the idea. I can go a little crazy. So here’s one more recipe to add to the list: Fresh Pineapple Cheesecake.

Bacon Wrapped Stuffed Jalapeños with cream cheese + pineapple

This weekend I entered a Tapas competition coordinated by a group of Portland food bloggers and my local Whole Foods Market. I didn’t have as much time to prepare as I would have liked, and ended up whipping together a fairly untraditional but scrumptious appetizer. I didn’t win the competition, but the dish I brought was still a winner – and definitely one we’ll be making at our next party.

These stuffed jalapenos really catch hold of all your senses – sweet, savory and bacon. I sorta felt like bacon deserved its own category here. Let me know if you disagree. And without the seeds, these appetizers aren’t spicy per say, but they deliver some serious heat!

Hawaiian Lava Flow Cocktails

Summer hit Portland like a freight train last week. The weather went from 60s-and-rainy to high-90s-and-super-hot within a 24 hour period. And all I could think about was a Lava Flow. Like, I probably would have had one for breakfast if that was appropriate. I finally got around to inviting some friends over and making a batch – and let’s just say that it was totally worth the wait.

Grilled Peach Pineapple Salsa

Have I told y’all about my fruit salsa obsession? Well. It all started with that peach mango salsa at Trader Joe’s. You’ve had the stuff, right? I used to put it on everything. Eggs. Salad. Chicken. What a weirdo, I know. But then I learned how to make fruit salsa at home, and I’ve been having fun experimenting with my own combinations. My current fave is Grilled Peach and Pineapple.

This salsa would still rock without grilling the fruit first, but I promise it’s worth the extra step. It adds a smokey flavor to the already sweet and spicy salsa. Plus, it just slightly tenderizes the fruit, making it even that much more juicy for the mixture.

You wanna know the craziest part? I made this on our stove top grill pan (not even a real BBQ)!. Easy peasy, right? I love summer. Continue reading

You may have noticed that I love tropical ingredients.Passion fruit. Coconut. Macadamia Nuts. Just to name a few.

Pineapple is right up there with my faves. And luckily, it’s easy to find good pineapple on the mainland because it’s one of the few tropical fruits that ships well.
