Easy Mango Icebox Cake

easy mango icebox cake

Have I mentioned that we took a trip to Portland last week? Because, I was just a LITTLE bit excited leading up to it. I’ve officially been a Hawaii resident for 2 years, and I haven’t returned to Portland once in that time. Needless to say, I had a long list of people, places, and things to see during our short trip back. It was a whirlwind for sure.  Continue reading

Mango Pico de Gallo

I used to look forward to the summers in Oregon for one thing: berry picking! Okay technically I loved a bunch of things about summer in the Northwest, but freshly picked strawberries, blueberries, raspberries? Sooooo good.

We don’t have “u pick” berry farms in Hawaii, but summer here brings in its own set of delicious crops. In the last week alone, we’ve gotten a bunch of treats from our neighbors and friends who have an overabundance of avocados, star fruit, and pitaya growing in their yard. And the mangos! We got so much mango, in fact, that I was worried about eating it all before it went bad. That might sound crazy, but you didn’t see the pile o’mangos on our kitchen counter.

Mango Margarita Cupcakes with Mango Lime Buttercream Frosting

Mango Margarita Cupcakes with Mango Lime Buttercream Frosting

It’s National Margarita Day, and you know what I’d be doing if I weren’t 33 weeks pregnant. But because margaritas are a pregnancy no-no, this year I had to get creative in order to join in on the celebration.

I’ve seen some delicious looking margarita cupcakes on Pinterest, but you know I’m really picky about my margaritas. I don’t love margarita mix AT ALL. I like my margaritas made with fresh citrus. And the more tropical, the better. So I experimented turning my favorite margarita – Mango Margarita – into a cupcake. And the result? Pretty darn delicious:  Mango Margarita Cupcakes with Mango Lime Buttercream Frosting are almost as good as the real thing.

Fresh Mango Banana Bread

Mango Banana Bread

It took a few weeks for all of my blog supplies to arrive in Hawaii, but my set-up is finally here – and I couldn’t be more excited to share my first recipe from my new home. One of my favorite things about living in Hawaii is the abundance of tropical fruit, which I simply can’t get enough of. And although I’ve been gobbling up fresh pineapples, papaya and mango, these tropical fruits are perfect for baking, too.  Continue reading

Tropical Mahi Mahi Salad with Coconut Mango Salsa

tropical mahi mahi salad with mango salsa.jpg We’ve been trying to eat more salads. You know, to compensate for all the cocktails and dessert. It’s all about balance. Problem is, salads can get so boring. So I’ve been trying hard to mix things up. This Topical Mahi Mahi Salad with Mango Salsa is one of our current go tos. We’ve had it three weeks in a row and aren’t sick of it yet. And that’s probably because it taste ah-mazing. Continue reading

Li Hing Mui Mango Margaritas

Mango Margarita with Li Hing Mui

Yesterday I partook in a “Doc McStuffins”-themed birthday party filled with three-year olds, mini lab coats and purple cupcakes. The birthday girl is the daughter of one of my dear friends – an adorable (and feisty!) three year old that I’ve seen grow before my eyes into a mini-human. As someone without kids (who had never heard of Doc McStuffins), this whole raising-a-child thing is a kind of a mind-blowing concept. Oh – and if you’re like me, let me clue you in: it’s the newest Disney Show craze featuring a girl who practices medicine on her stuffed animals. Duh.

And speaking of crazy things, today marks my three year Blogiversary. It feels like just yesterday that I published my first post.  I hope the mammas out there aren’t offended by this comment – but I can’t help but think about how this blog has become my baby. I’ve laughed and cried over it, been up at all hours of the night, feel like I don’t know what I’m doing half the time – but love it all the same, and feel so proud of the results. I’ve honestly never stuck with anything this long in my entire life. And the best part is that I still love it. As in, waking-up-in-the-morning-thinking-about-it, going-to-sleep-at-night-thinking-about-it type of love. In fact, my husband would tell you that I’m down right obsessed. But regardless, it’s been a busy three years, including:

a blog redesign. and then another.

countless brand partnerships and even a photoshoot in LA.

an engagement, wedding and honeymoon.

and all things margarita.
