In the midst of a meat-crazed pregnancy, I did something a little crazy. I made vegan tacos. On naan bread, of all things.

It all started at my 9 month check-up, when the doctor declared that our baby was looking large. In fact, I think she repeated that sentiment several times throughout the appointment. She didn’t seem concerned, but she’s also not the one who’s going to do the pushing here. So from that point on, I’ve been trying to be a little more conscious of what I eat. And clearly a sleeve of Thin Mints doesn’t count, because everyone knows Girl Scout cookies are practically calorie free. Or something.

The best kale salad! Really.

Kale has become one of our staple kitchen ingredients; like milk or eggs. Or wine. I’m pretty sure that counts as a staple, anyway. This salad is a mixture of all my favorite ingredients on a bed of raw kale: roasted butternut squash, pecans, goat cheese and dried cranberries. And, the post title is no lie. This is the best kale salad. Ever.

Sweet Potato & Kale Tostadas

Did I mention I signed up for a half marathon? I posted about it on Facebook a few days ago and got SO many words of support. Thanks, guys. You’re the coolest ever. If you could keep that moral support up on race day, I’d be really appreciative. Perhaps I’d even make you a treat. Like Sweet Potato and Kale Tostadas.

Not the treat you had in mind? Don’t judge until you’ve tried this dish. I don’t know if it’s the training regiment, but I’ve been craving these healthy tostadas like they’re candy. And honestly, I don’t think it’s the training. They’re super satisfying in every way – and easy to make, which I’m thankful for. Do you know how long it takes to run 5-10 miles after work? A really long time. For me anyway. I’m starving by the time I return home!
