Haupia French Toast (for a crowd!)

Remember when we talked about haupia? I’m a huge fan of this delicious Hawaiian treat. But then again, what’s NOT to love about coconut pudding?

It gets better, folks. Because I learned how to stuff haupia into something that’s equally as fabulous: french toast.  Um yes. I just went there. And yes. It’s just as good as it sounds. Rhubarb Upside-Down Cake

Tropical flavors like mango, pineapple and passionfruit remind me of home. But, there are certain flavors of the Pacific Northwest that I’ve come to know and love as well. One of my go-tos is rhubarb. And just like I look forward to pumpkin-recipes in the fall, I always look forward to rhubarb-recipes in the spring. Some of my favorite rhubarb recipes include Rhubarb Custard Pie and Homemade Rhubarb Frozen Yogurt. But this year I’m adding a new favorite to the mix: Rhubarb Upside-Down Cake.  Continue reading

Cinnamon Grapefruit Muffins

When you think about tropical Hawaiian fruit, you probably imagine pineapples. Mangos. And my favorite, papayas. It might surprise you, but citrus also grows really well in certain parts of the Hawaiian Islands. My aunt lives up in the hills on the Big Island, and has a small orchard behind her house. She called yesterday to tell me that her lemon, orange and grapefruit trees were creating such a bounty that she was literally struggling to give it all away. Luuuucky.

My husband’s family is in town for the holidays. And one of my favorite things about having house guests is the excuse to stock up the fridge and bake up a storm. I consider having a fully stocked kitchen and fresh baked treats on the counter integral in becoming hostess of the mostess. 

And speaking of baked treats, my father-in-law drinks black coffee like it’s going out of style – and he loves having a bite of something sweet to go along with it. So naturally, I figured coffee cake would be the perfect solution. With a holiday twist, of course. ‘Tis the season! So I added a Cranberry Pecan Streusel topping to my go-to Sour Cream Coffee Cake recipe. And, holy smokes. This recipe is a keeper.

Remember that rant from last week? About baked donuts? Well guys and girls, the quest continues. And I have to tell you about another rockstar baked donut recipe that totally classifies as a good baked donut (however hypocritical it might sound): Baked Strawberry Donuts with Honey Bourbon Glaze.

Although I’m not normally a huge fan of whisky, I recently discovered honey bourbon. And, I am a changed woman. It’s so yummy and smooth that apparently I thought it was a good idea to add to breakfast food. Oh wait, this has happened before, hasn’t it? Please don’t judge me.

Acai Bowls

Acai Bowls

Sometimes Hawaii is behind in cool trends, from fashion to music to movies. But in the case of Acai Bowls, Hawaii is waaay ahead of the curve.

Acai berries (pronounced ah-sai-e) traditionally come from South America and are loaded with antioxidants. They are considered a super food, and it doesn’t hurt that they also happen to be delicious. You can find acai berries in several forms here in the states, most commonly dried. But Acai Bowls are perhaps the most delicious (and fun!) way to enjoy the acai berry.

Baked Apple Empanadas

In true confession, I’m a total creature of habit. From french apple tarts to apple butter, I tend to make the same tried-and-true recipes each season.

This Fall, I was determined to spice things up in the kitchen. I think it’s safe to say that I passed the test with these homemade apple empanadas (using this recipe from Global Table Adventure).

If you’re a crust person like me, you are going to want to eat the entire batch of these little handheld treats. They’re like inside out pies, filled with ooey gooey apple pie filling.

Take it from me: these empanadas are delicious warm or cold. Or covered in vanilla ice cream and caramel sauce or… well, you get the idea.
