There are no words to describe New Year’s Eve in Hawaii. In fact, if you haven’t experienced it for yourself, you might not believe the craziness. Imagine the way that the 4th of July is celebrated here on the mainland. And times that by 100. We’re talkin’ fireworks galore, mochi making, eating Japanese Soba noodles for a long life, sips of sake at midnight for good luck, and many other great traditions that reflect the melting pot of cultures that make up Hawaii.

I’m usually home in Hawaii for the holidays – and I always try to stretch my trip over NYE, too. Last year, we watched the most ginormous fireworks display while hanging out at the beach. Barefoot and coatless. It was absolutely lovely.

This year, we’ve remained in Portland for the holiday, which means New Years’ Eve will be different, to say the least. We’ll dress up – coats and all – and head to see some friends, with a pitcher of this Grapefruit Thyme Champagne Cocktail in tow. Knowing me, I’ll make it to midnight and then promptly declare I’m ready for bed. Luckily, this cocktail is perfect for NYE. It’s festive and tasty, but not too boozy – so you don’t have to worry about a painful January 1st. Plus – I love the idea of having a pitcher of cocktails – your friends can serve themselves, and you won’t get stuck playing bartender.

Grapefruit Thyme Champagne Cocktail
Serves 6

2 cups sugar
1 cup water
2 bunches fresh thyme
1 bottle champagne
1 large, ripe grapefruit

Begin by making a thyme-flavored simple sugar syrup. Add sugar and water to a small pan, and heat over medium-low. Stir until sugar dissolves, and then add 1 bunch of thyme to the pan. Cover and reduce to a simmer. Leave the pot alone for 10 minutes, and then remove from heat and let cool.
When it’s cool, juice the grapefruit into a pitcher (being careful to catch seeds!). Add 1 cup of the simple syrup to start (add more to taste as needed depending on sweetness of champagne), and top with champagne. Stir and adjust simple syrup as needed. Serve in champagne glasses with a garnish of thyme.

    (FRENCH 75)


    1 ounce London dry gin
    1 ounce fresh lemon juice
    1/2 ounce 2:1 simple syrup
    2 ounces chilled champagne


    Combine all ingredients but champagne in a cocktail shaker with ice. Shake until ingredients are combined and chilled. Add champagne. Pour over fresh ice in a tall glass and garnish with a lemon peel.
