Summer hit Portland like a freight train last week. The weather went from 60s-and-rainy to high-90s-and-super-hot within a 24 hour period. And all I could think about was a Lava Flow. Like, I probably would have had one for breakfast if that was appropriate. I finally got around to inviting some friends over and making a batch – and let’s just say that it was totally worth the wait.
If you haven’t been to Hawaii, you might not know what a Lava Flow is. If this applies to you, please put it on your To Do list. Hawaii AND Lava Flows. Lava flows are basically a combination of the two best tropical drinks ever: Pina Colada and Strawberry Daiquiri. And yes, they are a flavor sensation – a combination of creamy coconut, pineapple, strawberry, and two types of rum. The mixture ends up looking like… well, a lava flow. Catch my drift?
There are things that your body just needs when it’s this hot. Flip flops. Popsicles. Kiddie pools in the backyard. And Lava Flows baby!
Start by blending the strawberries until pureed. If you’re using frozen strawberries, let defrost first. You may also need to add a splash of water to help with the blending process. Pour puree into a separate container and refrigerate. Rinse your blender and blend banana, pineapple juice, coconut cream and ice (start with 2 cups and add more as needed, and depending on how icy you like your blended cocktails). Add rums and mix for another 10 seconds to blend evenly. Pour evenly into 4 glasses.
Next, get the pureed strawberry out of the fridge and pour the pink puree over each glass of pina colada slowly so that it pools at the top of the glass. Use a straw or knife to stab cocktail, letting the strawberry puree drip down the coconut mixture like a lava flow. Garnish with a pineapple wedge. Enjoy immediately!
